Aperol Spritz Cocktail

I first had this lovely cocktail in Bobo’s Lounge in San Francisco. I love the bright color and the slightly bitter orange flavor provided by the Aperol, an Italian liqueur whose secret recipe dates to 1919. Pretty, bubbly, and light, it is a perfect aperitif but also an enjoyable digestif after dinner. It is very popular in Italian cafes, where people drink it at all hours. And it probably doesn’t hurt its celebrity that it is seen in the movie “Meet the Parents” when Dustin Hoffman’s character offers Robert De Niro’s character an Italian Spritz instead of the Tom Collins he normally prefers. It is extremely easy to make and to adjust to your own taste.
Alternatively, you can make a lovely blue Curacao Spritz, by substituting in the orange-flavored blue Curacao liqueur made on that island.
2 parts prosecco
1 part Aperol liqueur
Pour into a large-bowled wine glass, filling to about half.
splash of lemon juice
¼ slice fresh orange
1 ice cube
Place in drink and serve.
