Cottage Cheese Morning Pie

This is usually among the stupendous array of goodies featured in the breakfast buffet at Elk Cove Inn, in the teeny town of Elk located just south of Mendocino in California. Wow your own guests with it!
2 cups cottage cheese
Beat with electric mixer for 1 minute.
2/3 cup sugar
2 Tbl. flour
1/3 tsp. cinnamon
1/4 tsp. nutmeg
grated rind from 1 orange
1 Tbl. orange juice
Add and blend well. Pour into greased pie plate (8” for thick, 9” for thinner).
350 degrees, 50 minutes, or until knife inserted comes out clean.
Refrigerate overnight. Top decoratively with fresh fruit and serve. This freezes well; just defrost overnight in the refrigerator.
