Eggs in Bell Pepper Rings

Perfect for breakfast or dinner, these easy-to-make bell pepper and egg flowers bring cheer to the table. I like to make them with two peppers in different colors and use the leftover peppers in a salad.
2 bell peppers
Cut off top, then cut two ½-inch rings from each. Remove the cores. Place in an oiled frying pan over medium heat.
4 eggs
Crack an egg into each ring. Season with salt and pepper to taste. Cook until the eggs are ready to turn, then flip like a regular fried egg. Continue cooking until done to your liking.
chives or rosemary
Cut over top of eggs to add color.
Serves 2.
