Peanut Butter Cookies

My Mom used to make peanut butter cookies for me when I was a kid. I loved them then and still do, especially eaten with a glass of milk. I most liked to help with making the fork criss-cross on top. This recipe is slightly different from my mom’s–it uses less sugar, flour, and butter.
1 stick butter
1 cup chunky peanut butter
1 cup brown sugar
1 tsp. vanilla
Cream.
1 egg
Beat in.
1 ¼ cups flour
½ tsp. baking soda
½ tsp. salt
Mix in until well blended. Roll into 1-inch balls, dip top in sugar, then place on ungreased cookie sheet. Criss-cross top and flatten with fork.
350 degrees, 15-20 minutes.
Makes 3 dozen small cookies.
