Lemon Bars
From the recipe box of travel writer Carole Terwilliger Meyers.

These lemon bars are easy to make and delicious. Because I have a productive Meyer lemon bush in my back yard, I have made them many times. Making this is a great way to use up lemons.
crust:
½ cup butter, soft
1 cup flour
¼ cup powdered sugar
Mix by hand or electric mixer. Press into an 8-inch by 8-inch square Pyrex cake pan.
350 degrees; 20 minutes. Cool for 10 to 15 minutes.
topping:
2 eggs, beaten
½ cup sugar
¼ cup fresh lemon juice
1 Tbl. lemon zest
2 Tbl. flour
1 tsp. baking powder
Mix and pour over crust.
350 degrees; 25 minutes. Cool. Cut into squares.
finish:
powdered sugar
Sift over top.
Serves 6 to 8.
