Sesame Kale Chips

This is a less spiced take-off on the delicious Trader Joe’s version of kale chips. They are especially nice to leave out for guilt-free snacking as you wander in and out of the kitchen.
1/2 bunch of kale, washed and dried (about two big handfuls)
1 Tbl. olive oil
1 Tbl. soy sauce
1 Tbl. sesame seeds
Remove stems and tear kale into bite-sized pieces. In a large bowl, whisk together oil and vinegar. Toss with torn kale. Cover a large baking sheet with aluminum foil. Place kale pieces in a single layer (for a crispy kale snack, leaves should not overlap).
salt & pepper to taste
350 degrees, 20 minutes, or until chips are crispy. Let cool. Serve.
