Veggie Chili
From the recipe box of travel writer Carole Terwilliger Meyers.

This goes particularly well with corn bread and honey. The recipe is vegan If you omit the topping suggestions.
1 Tbl. olive oil
1 onion, diced
Saute in medium pot. Then add:
4 cloves garlic, minced
2 Tbl. chili powder
2 tsp. ground coriander
1 bay leaf
1 tsp. anise seed, ground (or powder) (optional)
Saute 2 minutes.
1 large (28 oz.) can of tomatoes, crushed or puréed
1 small can red kidney beans, drained and rinsed
1 small can pinto beans, drained and rinsed
2 jalapeno peppers, diced, or ½ t. cayenne, or both!
salt, pepper
Add and simmer uncovered for 30 minutes.
Toppings:
grated cheese
fresh cilantro
sour cream
Serves 4.
